Keto Strawberry Shortcakes

INGREDIENTS
Shortcakes:

  • 1 ½ tsp baking powder
  • ½ tbsp coconut flour
  • Dash of salt
  • 1 lb Strawberries
  • 5 egg whites
  • ½ tsp cream of tartar
  • 6 tbsp butter, melted
  • ½ tsp vanilla extract
  • 3 tbsp granulated erythritol
  • ½ tsp liquid stevia
  • 1 cup almond flour

Whipped cream:

  • ¾ cup heavy whipping cream
  • ¼ tsp vanilla extract
  • 10 drops liquid stevia
  • Dash of salt

INSTRUCTIONS

  1. Preheat your oven to 350F.
  2. In a large bowl with a hand mixer, or with a stand mixer, beat the egg whites with the cream of tartar until fluffy and until stiff peaks form. Slowly drizzle your butter into the fluffy egg whites while beating on a lower speed until combined. Then add your vanilla, stevia, and erythritol and beat on a lower speed until combined.
  3. In a separate bowl, add your almond flour, baking powder, coconut flour, and salt and mix until evenly distributed.
