Grilled Salmon with Herb Yogurt Sauce

Grilled Salmon with Herb Yogurt Sauce is a deliciously light and healthy dinner idea for warmer weather. I've been craving grilled fish now that the weather's getting warmer.

INGREDIENTS:
Fresh Herb Yogurt Sauce

  • 1 cup watercress
  • 1/4 cup cilantro
  • 1/4 cup mint
  • 1 scallion cut up
  • 1 cup non-fat yogurt
  • 1 tablespoon fresh lime juice
  • sea salt and fresh ground pepper to taste

Grilled Salmon

  • 8 ounces fresh salmon filet
  • 1 teaspoon olive oil
  • sea salt and fresh ground pepper

INSTRUCTIONS:
Fresh Herb Yogurt Sauce

  1. Place watercress, cilantro, mint and scallion in food processor and process until minced; add yogurt and lime juice, and continue processing until blended with green specks still remaining. Season to taste with salt and pepper.

Grilled Salmon

  1. Rub olive oil on both sides of salmon and season with salt and pepper. Grill until just done. Do not overcook. Serve with Fresh Herb Yogurt Sauce.
