LOw Carb,Gluten Free-Stewed Tomato and Chicken Skillet

Ingredients

  • 28 oz Can of Whole Peeled Tomatoes
  • 2 cups Kale Chopped
  • 1/2 cup Chicken Broth
  • 1 tsp Salt
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Rosemary
  • 2 Tbls Oil or fat of choice
  • 6 Chicken Thighs
  • 2 Carrots Peeled and Diced
  • 2 Celery Stalks Diced
  • 1 cup Yellow Onion Diced
  • 2 cloves Garlic minced
  • 2 Tbls Tomato Paste

Instructions

  1. Heat the oil or cooking fat in a large skillet over medium/high heat. Season the chicken with a little salt and pepper and cook for 3 minutes a side and remove from pan
  2. Turn the heat down to medium and add in the carrots, celery, onion and garlic. Cook for about 5 minutes (stirring occasionally)
