KETO BREAKFAST PIZZA

Breakfast doesn't have to be boring. Give yours an upgrade by making this delicious breakfast pizza.

INGREDIENTS:
For the Pizza


  • 1 tablespoon red onion, chopped
  • 2 tablespoons Italian sausage, or 1 link of breakfast sausage casing removed
  • 2 tablespoons butter
  • 2 large mushrooms, sliced
  • 1 clove garlic, minced
  • 2 large eggs
  • Kosher salt
  • Fresh cracked black pepper
  • 1 pinch dried basil
  • 1 pinch dried oregano
  • 1 tablespoon tomato sauce with basil
  • 1/4 cup freshly shredded mozzarella cheese

Optional Toppings

  • Fresh Parmesan cheese, grated
  • Crushed red pepper flakes
  • Fresh parsley, chopped

INSTRUCTIONS:

  1. Cook the sausage over medium-high heat until no pink remains, breaking it apart with a wooden spoon as it cooks.
  2. Meanwhile, dice veggies. 
  3. Remove the sausage from the pan and reserve on a plate.
  4. Add a tablespoon of butter to the pan and saute the onions, mushrooms, and garlic until soft, about 3 minutes. Remove the veggies from the pan and save them with the sausage. Reduce the heat to low and wipe out the pan.
  5. Beat eggs together, and add salt, pepper, basil, and oregano.
  6. Add the remaining tablespoon of butter to the pan. When the butter has melted, add the eggs to the pan. Swirl the pan to make sure the eggs are in an even layer.
