CHOCOLATE COOKIE DOUGH COOKIE CUPS

Buttery chocolate cookie cups stuffed with chocolate chip cookie dough.

INGREDIENTS
Cookie cups
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 140 grams (1 cup) plain flour
  • 115 grams (1/2 cup / 1 stick) unsalted butter, room temperature
  • 90 grams (1/2 cup) brown sugar
  • 40 grams (1/2 cup) cocoa powder
  • 1/2 teaspoon baking soda
  • 50 grams (1/4 cup) caster sugar

Cookie dough filling
  • 1 teaspoon vanilla extract
  • 140 grams (1 cup) plain flour
  • 2 tablespoons milk
  • 115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
  • 150 grams (3/4 cup) caster sugar
  • 110 grams (3/4 cup) milk chocolate chips
  • 110 grams (3/4 cup) dark chocolate


CHOCOLATE COOKIE DOUGH COOKIE CUPS

INSTRUCTIONS
  1. Grease mini muffin tin well with butter. In a large mixing bowl, add butter and sugars and beat with an electric mixer until combined. Add the vanilla and egg and beat until smooth.
  2. Sift in the flour, cocoa powder and baking soda and stir until the mixture comes together to form a soft dough. Cover with plastic wrap and chill the cookie dough for 1 hour.
