Weight Watchers Oven Roasted Smoked Sausage and Potatoes

INGREDIENTS

  • 1 package of smoked sausage, sliced into rounds *see notes*
  • 1 large onion, peeled and chopped
  • 5 medium potatoes, peeled and chopped into ½ inch cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon of dried thyme (optional)
  • 1/2 cup of strong cheddar cheese (optional)

INSTRUCTIONS

  1.  Preheat the oven to 400*F.
  2. Line a large baking tray (with sides) with several sheets of foil, and spray with cooking spray. Set aside.
