Sausage Potato Breakfast Casserole

INGREDIENTS

  • 1 lb potatoes, cubed
  • 1 lb Italian sausage, mild
  • 1 tsp oil
  • ½ large onion, finely chopped
  • garlic cloves, minced
  • ½ red pepper, cubed
  • ½ green pepper, cubed
  • 6 oz mushrooms, cubed
  • 7 large eggs
  • 1/3 cup half and half
  • 2 cups shredded cheese, divided
  • ½ tsp salt, or to taste
  • ¼ tsp ground pepper, or to taste

INSTRUCTIONS

  1. Dice potatoes. Bring potatoes to a boil and cook 5 minutes. Drain and set aside to cool.
  2. Heat a large skillet over med/high heat and brown sausage, breaking up the meat as it’s cooked. Remove sausage.
  3. In the same skillet, add 1 tsp oil and the onions, peppers and mushrooms. Sautee until vegetables are slightly tender. Add garlic and mix and set aside to cool.
